This is great in a crock pot for 8 hours on low.

Ingredients
| 2 |
lb. boneless pork, cut into 1" cubes |
| 2 |
T bacon fat |
| 1/2 |
cup minced onion |
| 3 |
cloves garlic, minced |
| 3 |
T chili powder |
| 2 |
tsp salt |
| 2 |
tsp oregano |
| 1 |
tsp cayenne pepper |
| 3 |
cups hominy (equivelant of 2 15 oz cans drained, 1 white and 1 yellow) |
Directions
- Brown pork in fat. Add onion and garlic- stir until golden brown. Mix in chili, cayenne, oregano, and salt. Add enough water to cover the pork. Mix in hominy. Bring to a boil. Reduce heat, cover partially and simmer until tender-2 hours on stove top.
