Fresh Summer salad

Makes 2 servings

When vegetables are grown locally this is a special salad

Ingredients
1 cup cucumber, sliced thin
1 cup tomato, cut in wedges
2 tbsp red onion, sliced
1 tbsp olive oil
1 tbsp red wine vinegar
1 tsp oregano, crushed
1/8 tsp salt, to taste
1/8 tsp pepper, to taste
2 tbsp parsley, chopped
Directions
  1. Mix altogether and enjoy!
