Corn & Edamame Salad

Makes 6 servings

side dish salad

Ingredients
3 cup shelled edamame
7 cup corn kernels
2 cup red onion
2 red sweet peppers
1/2 cup cilantro
1/2 cup lite mayonaise
1/2 cup lemon juice
1/2 cup ginger
1/2 tsp salt
1 pepper
Directions
  1. toss vegetables together

  2. Mix dressing ingredients together

  3. carefully mix into vegetables

  4. Add cilantro and lightly toss.
