Greek Salad

Makes 6 servings

Super salad for lunch!

Ingredients
4 large ripe tomatoes
1 large red onion
1 green bell pepper
1 cucumber
1/4 pound of feta cheese, sliced or crumbled
1 1/4 teaspoons dried oregano
1/2 teaspoon salt
3 tablespoons olive oil
12 kalamata olives
1 tablespoon water
Directions
  1. Dice the tomatoes, onion, bell pepper and cucumber (peeled). Toss together with 2 tbsp of the olive oil and 1 teaspoon of oregano.

  2. Top with the feta cheese and kalamata olives.

  3. Add 1 tablespoon of olive oil with water. Toss into the salad. Top with 1/4 teaspoon oregano.

  4. Serve into 6 bowls.
