Ingredients

ripe avocados, peeled and cubed |
| 1 |
cucumber, peeled, seeded and cubed (11206) |
| 3/4 |
cup low-fat soy milk (85310) |
| 2 |
tablespoons cilantro |
| 2 |
green onions, chopped |
| 2 |
cups vegetable broth (99588) |
| 1 |
salt and pepper to taste |
| 1 |
tablespoon lemon juice |
Directions
- In a blender or food processor blend the first 5 ingredients, until smooth. Add the lemon juice, salt and pepper and as much vegetable broth as you want to make the desired consistency. Chill.
