wonderful creamy soup

Ingredients

tbsp butter |
| 1 1/2 |
cup carrots,diced |
| 1 1/2 |
cup celery,diced |
| 2 |
small potatoes,diced |
| 1 |
medium leek,sliced |
| 650 |
g fish fillets(including some smoked) |
| 300 |
ml milk,lowfat |
| 600 |
ml fish stock |
| 227 |
ml cream,light,whipping |
| 1 |
tbsp plain flour |
| 1 |
tbsp fish sauce |
| 1 |
salt and pepper |
Directions
- Sweat veg in butter til soft.Add milk,fish stock,simmer for 20mins.Add boned,skinned,chopped fish,simmer 10mins.Add cream,simmer 10mins.Remove veg and fish.Thicken liquid with flour paste.Replace veg and fish,heat through,serve.
