This is excellent corn bread and works everytime.

Ingredients
| 1 |
cup Flour (whole Wheat) |
| 1 |
cup cornmeal (any, stone ground prefferred) |
| 1/2 |
tsp salt (seasalt) |
| 2 |
tbsp raw sugar (any non-processed) |
| 2 |
tsp baking powder (no aluminum) |
| 1 |
tbsp egg substitute |
| 1 |
cup soy milk |
| 3 |
tbsp oil (olive) |
Directions
- First put the olive oil in a medium size iron skillet and place in a oven. Turn on the oven and let it heat up while you mix the cornbread. Place all the dry ingredients in a large mixing bowl and mix briefly with a sponn. Then pour one cup of soy milk in and stir the mixture. The mixture should be barely wet enough to flow. If too dry, add a couple of tablespoons of milk at a time until it is easy to stir. Remove the pan from the oven and pour the hot oil in the mixture. Stir a few times more until the oil appears to be mixed up. Pour mixture in pan and place in oven. Set a timer for ten minutes. The cornbread should be done to a tooth pick test. If you want crisper (drier) bread, place in oven fro one additional minute.
