Blueberry Coffee Cake Low Fat

Makes 16 servings

Delicious low fat blueberry coffee cake

Ingredients
1 c. yogurt, non fat plain
2 eggs
3 T. vegetable oil
1 1/2 cups flour
2 t. baking powder
1/2 t. baking soda
1/2 c. sugar
1 t. vanilla
1 1/2 c. blueberries

Topping:
1/3 c. walnuts
1/4 c. flour
1/4 c. brown sugar
2 T. butter
Directions
  1. Mix all ingredients for batter folding in blueberries in last, be gentle.

  2. Combine topping ingredients.

  3. Preheat oven to 375.

  4. Butter or spray with cooking spray, 9 x 9 inch pan.

  5. Pour batter in, sprinkle topping and spread evenly over cake. Bake at 375 for 35-40 minutes.
