cooked spaghetti in a frittata-like dish.

Ingredients
| 3 |
cups spaghetti |
| 4 |
eggs, lightly beaten |
| 1 |
tsp salt |
| 1 |
tsp black pepper |
| 1 |
tsp garlic powder |
| 1/2 |
tsp ground cayenne pepper |
| 2 |
tbsp grated parmesan cheese |
| 1/2 |
cup onion, chopped |
| 1/2 |
cup bell pepper, chopped |
| 1/2 |
cup tomatoes, diced |
| 1 |
cooking spray |
Directions
- beat the eggs, salt and pepper until smooth.
- add parmesan cheese. mix.
- add spagetti and vegetables. toss.
- spray a skillet or saute pan liberally with cooking spray. don't skimp. over medium to medium-high heat, pour mixture into pan. watch it, and keep peking underneath until bottom is browned.
- slide onto a plate, and turn over into skillet to brown other side. cook until edges are browned and crispy, and center is set. cut into wedges to serve.
- add a cup of diced chicken or ham for a meaty one-pan meal. (you may want to add an extra egg.)
