Cucumber Salad Recipe

Ingredients
2 cucumbers
4 scallions
1 jalapeno pepper
4 tablespoons sugar
1/2 teaspoon salt
1/2 cup vinegar,rice, unseasoned
1/2 cup cold water
Directions
  1. Whisk salt, sugar, vinegar, and water together in a bowl

  2. Chop the scallions on an angle about 2 inches up into the green stem.

  3. Seed the jalapeno and thinly slice. Add the scallions and jalapeno to the bowl.

  4. Peel the cucumbers and score with a fork. Cut in half lengthwise and scoop out the seeds with a spoon. Cut in 1/8 inch slices and add to the bowl. Stir all ingredients to mix and coat and let marinade in the refrigerator for about 3 hours. Serve cold.
