| 2 | cucumbers |
| 4 | scallions |
| 1 | jalapeno pepper |
| 4 | tablespoons sugar |
| 1/2 | teaspoon salt |
| 1/2 | cup vinegar,rice, unseasoned |
| 1/2 | cup cold water |
- Whisk salt, sugar, vinegar, and water together in a bowl
- Chop the scallions on an angle about 2 inches up into the green stem.
- Seed the jalapeno and thinly slice. Add the scallions and jalapeno to the bowl.
- Peel the cucumbers and score with a fork. Cut in half lengthwise and scoop out the seeds with a spoon. Cut in 1/8 inch slices and add to the bowl. Stir all ingredients to mix and coat and let marinade in the refrigerator for about 3 hours. Serve cold.
