A cheesy rice with corn and green onions. Pretty enough for company and tastes great!
| 3 | cups cooked rice |
| 1 1/4 | cups monterey jack cheese |
| 1 | cup corn |
| 1/2 | cup milk |
| 1/3 | cup sour cream |
| 1/2 | cup green onions |
- preheat 350 degrees
- mix together all ingredients saving 1/2 cup of cheese
- transfer to 1 qt casserole dish
- sprinkle top with remaining cheese
- bake for 25-30 minutes or until cheese is melted
