Meaty Biscuit Cups

Makes 18 servings

Things the analyzer couldn't understand: Use lean ground beef or turkey, Pillsbury biscuit dough, and low-fat shredded cheddar cheese. You will get 20 cups.

Ingredients
1 lb lean ground beef
1/3 cup finely chopped red onion
1/3 cup barbecue sauce
1/2 cup frozen corn, thawed
10 oz biscuits
1/2 cup sharp cheddar cheese
Directions
  1. Preheat oven to 400 degrees.

  2. In a medium nonstick skillet coated with nonstick cooking spray, saute the beef and onion over medium heat about 5 minutes or until the beef is done, stirring occasionally. Drain any excess fat and add the barbecue sauce and corn, mixing well.

  3. Separate each biscuit in half and press each half into nonstick muffin tins coated with nonstick cooking spray. Press the sides of each biscuit gently up into a cup shape.

  4. Divide the beef mixture into each biscuit cup and bake for 10 minutes. Remove from the oven and sprinkle with cheese. Return to the oven for 1 minute or until the cheese melts.
