Spicy chicken soup

Makes 5 servings

A good spicy chicken soup filled with summer veggies

Ingredients
8 oz chicken breast
1 medium onion
2 stalks celery
1/4 cup jalapeno
1/2 green pepper
1 tbsp cumin
1 1/2 cup zucchini
1 1/2 cup tomatoes
3 tbsp couscous
1 medium potato
1 tsp olive oil
2 tbsp tomato paste
Directions
  1. saute onion and celery. Add rest of ingredients except couscous, green pepper, zuchinni, and toms. Add water to cover. Cook until vegetables are tender. Add rest of veggies. Simmer 5-10 minutes more. Spice with hot sauce or cayenne.
