Ingredients

cups dried peas |
| 1/3 |
cup olive oil |
| 1/3 |
cup balsamic vinegar |
| 2 |
peppers |
| 1 |
onion |
| 1/2 |
cup parsley |
Directions
- Soak black eyed peas or bring to boil and let sit for 1/2 hour. Cook for 20-30 minutes.
- Meanwhile, chop peppers, onion and parsley.
- Toss drained beans with other ingredients and chill.
