Black-eyed pea salad from Beyond the Moon Cookbook

Makes 8 servings

Marinated salad

Ingredients
2 1/2 cups dried peas
1/3 cup olive oil
1/3 cup balsamic vinegar
2 peppers
1 onion
1/2 cup parsley
Directions
  1. Soak black eyed peas or bring to boil and let sit for 1/2 hour. Cook for 20-30 minutes.

  2. Meanwhile, chop peppers, onion and parsley.

  3. Toss drained beans with other ingredients and chill.
