Zucchini - tomato bake

Vegetarian Dinner option

Ingredients
4 cups zucchini
1 green pepper
1 red pepper
1 medium onion
2 tbsps olive oil
1/2 cup bread crumbs
1 cup grated cheddar cheese, part-skim
4 tbsps grated parmesan cheese
4 (medium) tomatoes
1 cup brown rice
Directions
  1. Slice zucchini

  2. saute pepper and onion for 5 minutes

  3. add zucchini and saute for 2 minutes

  4. add bread crumbs and parmesan and stir

  5. place in greased baking pan

  6. top with tomatoes and cheddar

  7. bake at 350 for 1 hr
