Ingredients

cups zucchini |
| 1 |
green pepper |
| 1 |
red pepper |
| 1 |
medium onion |
| 2 |
tbsps olive oil |
| 1/2 |
cup bread crumbs |
| 1 |
cup grated cheddar cheese, part-skim |
| 4 |
tbsps grated parmesan cheese |
| 4 |
(medium) tomatoes |
| 1 |
cup brown rice |
Directions
- Slice zucchini
- saute pepper and onion for 5 minutes
- add zucchini and saute for 2 minutes
- add bread crumbs and parmesan and stir
- place in greased baking pan
- top with tomatoes and cheddar
- bake at 350 for 1 hr
