Mom's Pasta Salad

Makes 5 servings

From the AJC, altered by Mom. Best pasta salad ever.

Ingredients
16 oz. dry pasta, tri-color rotini
6 1/2 oz. artichoke hearts (1 jar)
1 cup broccoli florets
3/4 cup carrots, in 2" matchsticks
1 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp dijon mustard
1 black pepper to taste
Directions
  1. Boil water and cook the pasta.

  2. For the last minute of the pasta's boiling time, add the broccoli florets and carrot matchsticks to the water. (Alternative: steam the florets and matchsticks. Boiling is easier, but steaming tastes better to some.) Strain in colander and put in a large bowl.

  3. For the dressing, in a small bowl, whisk together the olive oil, balsamic vinegar, dijon mustard, and the marinade from the jar of artichoke hearts. Add black pepper to taste.

  4. Add the artichokes to the large bowl, then the dressing.

  5. Toss and chill.
