Jalapeno Beef and Corn Bread Pie Recipe

delicious supper with an exotic twist.

Ingredients
1 lb ground beef
1 cup yellow cornmeal
1 cup skim milk
2 egg whites
1/2 tsp baking soda
1 tsp shortening
8 ounce creamed corn
1 large onion
1/2 cup mozzarella cheese, shredded
3 jalapeno peppers
Directions
  1. Preheat oven to 350 F. Heat a medium skillet over medium-high heat; add beef. Cook, stirring continually, until browned and crumbly, about 5min; drain.

  2. Grease a 10-inch ovenproof skillet or baking ban. Combine cornmeal, milk, eggs, baking soda, shotening, corn in a large bowl.

  3. Spoon half the corn bread batter into the prepared skillet. Spread beef over batter. Top with onion, cheddar and jalapenos. Spread remaining corn bread batter over filling, covering completely. Bake until browned on top and cheese is melted, about 50min.
