Great tasting and healthy topping for bruschetta. Serve on warm toasted whole wheat bread.
| 3 | tomatoes, chopped |
| 2 | cloves garlic, chopped |
| 3 | boiling onions, chopped |
| 3 | tbsp olive oil |
| 1 | tbsp oregano |
| 1 | tbsp basil leaves |
| 1 | tsp black pepper |
- Combine olive oil, oregano, and basil in sauce pan.
- Chop tomatoes, garlic and onions and add to sauce pan.
- Sprinkle black pepper.
- Warm and stir on medium heat to combine flavors. About 10 minutes.
- Drain off excess liquid if desired.
- Spread 2 tablespoons on a normal sized slice of whole wheat toast.
