Roasted Cauliflower

Makes 4 servings

From Cook's Illustrated - less oil, more salt

Ingredients
2 pounds cauliflower
1 tbsp olive oil
1/2 tsp salt
1 tsp pepper, ground
Directions
  1. Chop cauliflower into roughly equal pieces.

  2. Toss with oil, salt and pepper.

  3. Roast in a 475 degree oven for approximately 20-30 minutes, turning occasionally.
