Veggie soup

Ingredients

cup ketchup |
| 1 |
tbsp canola oil |
| 1 |
medium onions, thinly sliced |
| 2 |
carrots, sliced |
| 5 |
medium potatoes, diced |
| 5 |
beets, diced |
| 7 |
cups cabbage, thinly sliced |
| 1/4 |
cup cilantro, finely chopped |
| 1/2 |
gallon water |
| 1 |
tbsp salt |
Directions
- Fry onions, carrots, ketchup in canola oil in soup pot until onions are tender.
- Add water and salt to pot
- After water comes to a boil, add beets, potatoes, and cabbage.
- When potatoes and beets become tender (about 40 minutes) turn off heat and add cilantro.
