Pumpkin Roll Recipe

Holiday dessert

Ingredients

Cake:
1 cup sugar
2/3 cup pumpkin
3 eggs
3/4 cup flour
1 tsp baking soda
1/2 tsp cinnamon

Filling:
8 ounce cream cheese
2 tbsp margarine
1 1/2 tsp vanilla
1 cup powdered sugar
Directions
  1. Preheat oven to 375. Grease cookie sheet. Line w/ wax paper & grease paper. Pour cake mix into cookie sheet, bake 15 min. Sprinkle tea towel w/ powdered sugar. Flip cake out onto towel, peel of wax paper & tightly roll up cake in towel. Cool in refrigerator for a few hours (or 15 min. in freezer).

  2. Cream together cream cheese and margarine. Add vanilla and sugar. Unroll towel and spread filling. Tightly roll up cake, wrap in saran wrap then foil and freeze overnight.
