Zucchini Slice Recipe

lighter quiche

Ingredients
1 pound zucchini
1 onion
1/2 pound ham
1 tsp olive oil
2 cups spinach
1 cup pumpkin
1/2 cup red pepper
8 eggs
1/4 cup flour
1/2 tsp baking powder
1/2 cup cheddar cheese, shredded
1/2 cup milk
Directions
  1. finely grate zucchini.

  2. drain zucchini to remove excess liquid.

  3. dice red pepper, pumpkin and fresh spinach, and mix with the grated zucchini.

  4. dice onion and ham (or canadian bacon).

  5. saute onion and ham in frying pan with the olive oil for about 5 min (until onion is soft). add to the veggies.

  6. whisk together 8 eggs and 1/2 cup milk. add to veggie/ham mixture. mix through flour and baking powder. mix through shredded cheddar cheese.

  7. line oven-safe pan with baking paper (to stop it from sticking). Pour mix into pan.

  8. Bake in oven at 200 degrees C for 30-40 min.
