Sweet Potato Casserole

Makes 16 servings

Fluffy sweet potatoes (yams) mixed with butter, sugar, and vanilla, and baked with a crunch oat streusel topping. Yummy!!

Ingredients
4 1/2 cup yam
1/4 cup butter
1/3 cup milk
1/4 cup sugar
1/2 teaspoon vanilla
2 eggs
1/2 cup brown sugar
1/2 cup flour
1/3 cup butter
1/2 cup oats
Directions
  1. Preheat oven to 350 degrees F. Grease a 9x13 inch baking dish.

  2. In a large bowl mix together mashed sweet potatoes, butter, milk, sugar, vanilla, and eggs. Spread sweet potato mixture into the prepared baking dish. In a small bowl, mix together brown sugar and flour. Cut in butter until mixture is crumbly, then stir in oats. Sprinkle oat mixture over the sweet potatoes.

  3. Bake for 25 minutes until golden brown.
