Spicy Chicken with Couscous

Makes 4 servings

An original HK recipe for the September "Survivor" Team Challenge, an amalgamation of a couple of Moroccan Recipes. I hope you like it.

Ingredients
1 1/2 tsp ground cumin
1/2 tsp grated fresh ginger
1/4 tsp cinnamon
1/8 tsp cayenne pepper
1 lb. skinless chicken breast
1 tbsp olive oil
1 red bell pepper, seeded and chopped
4 scallions, sliced
1/4 cup dried apricots, diced
1/4 cup golden raisins
2 cloves garlic, minced
1 tbsp cumin
1 tsp coriander
1 tsp paprika
1/2 tsp cayenne pepper
1/2 cup orange juice
1 tsp salt
1/5 cup water
2 cup couscous
Directions
  1. Mix the 1 1/2 tsp cumin, fresh ginger, cinnamon and cayenne pepper in a large ziploc bag.

  2. Slice the Chicken and add to the ziploc bag, shake to cover.

  3. Heat the oil in a large nonstick skilled, then add the chicken. Saute' until cooked through, about 8 mninutes. Transfer the chicken to a plate and keep warm.

  4. In the skillet, saute' the bell pepper, scallins and garlic until softened.

  5. Stir in the rest of the spices, the apricots, raisins, orange juice, salt and water, and bring to a boil.

  6. Stir in the couscous. Remove fromt he heat, cover and let stand until the liquid is absorbed, about 5 minutes.

  7. Add the chicken and mix throroughly with a fork.

  8. Serve Hot.
