An original HK recipe for the September "Survivor" Team Challenge, an amalgamation of a couple of Moroccan Recipes. I hope you like it.

Ingredients

tsp ground cumin |
| 1/2 |
tsp grated fresh ginger |
| 1/4 |
tsp cinnamon |
| 1/8 |
tsp cayenne pepper |
| 1 |
lb. skinless chicken breast |
| 1 |
tbsp olive oil |
| 1 |
red bell pepper, seeded and chopped |
| 4 |
scallions, sliced |
| 1/4 |
cup dried apricots, diced |
| 1/4 |
cup golden raisins |
| 2 |
cloves garlic, minced |
| 1 |
tbsp cumin |
| 1 |
tsp coriander |
| 1 |
tsp paprika |
| 1/2 |
tsp cayenne pepper |
| 1/2 |
cup orange juice |
| 1 |
tsp salt |
| 1/5 |
cup water |
| 2 |
cup couscous |
Directions
- Mix the 1 1/2 tsp cumin, fresh ginger, cinnamon and cayenne pepper in a large ziploc bag.
- Slice the Chicken and add to the ziploc bag, shake to cover.
- Heat the oil in a large nonstick skilled, then add the chicken. Saute' until cooked through, about 8 mninutes. Transfer the chicken to a plate and keep warm.
- In the skillet, saute' the bell pepper, scallins and garlic until softened.
- Stir in the rest of the spices, the apricots, raisins, orange juice, salt and water, and bring to a boil.
- Stir in the couscous. Remove fromt he heat, cover and let stand until the liquid is absorbed, about 5 minutes.
- Add the chicken and mix throroughly with a fork.
- Serve Hot.
