Recipe stolen from the back of the JIF peanut butter jar!
| 3/4 | cup crunchy peanut butter |
| 1/2 | cup shortening |
| 1 1/4 | cups light brown sugar, packed |
| 3 | tablespoons milk |
| 1 | tablespoon vanilla |
| 1 | egg |
| 1 3/4 | cup all-purpose flour |
| 3/4 | teaspoon salt |
| 3/4 | teaspoon baking soda |
- Heat oven to 375.
- Combine peanut butter, shortening, brown sugar, milk, and vanilla in a large bowl. Beat at medium speed until well incorporated.
- Add egg. Mix just until blended.
- Combine flour, soda, and salt in a medium bowl. Add to peanut butter mixture at low speed, just until blended.
- Drop by heaping teaspoonfuls, 2 inches apart, onto a baking sheet.
- Flatten slightly with a fork in a criss-cross pattern.
- Bake for 7-8 minutes.
- Cool on a wire rack.
