pound turkey Italian sausage, mild |

cups chicken stock |

cup salsa |

cup uncooked rice |

teaspoon saffron |

pound chicken breasts, boneless and skinless |

pound shrimp, medium peeled and deveined |
| 1/2 |
cup peas, frozen |
Directions
- Cut sausage into 1/2 inch slices, discard casing.
- Cook sausage, onion and garlic in oil in a 12 inch skillet until sausage is no longer pink.
- Add broth, salsa, rice and saffron. Bring to a boil. Cover and simmer 10 minutes.
- Stir in chicken. Cover and continue to summer 5 minutes.
- Stir in shrimp and peas. Cover and continue to simmer 5 minutes. Remove from heat, let stand covered 5 to 10 minutes, until liquid is absorbed.
