Chicken in Soy and Tomato Sauce Recipe

Makes 1 serving


Grilled Chicken marinated in Sauce served on New Potatoes.

Ingredients
1 chicken breast
10 g Red onion
30 g Button mushrooms
1 tbsp Tomato ketchup
3 tbsp Soy Sauce
70 g Potatoes
Directions
  1. Place Chicken in clingfilm and tenderize until only 1cm thick.

  2. Mix together 1 tbsp tomato ketchup with 3 tbsp soy sauce and add chopped red onion into mixture.

  3. Marinade chicken in mixture for at least 20minutes.

  4. Whilst chicken is marinading chop new potatoes into cubes.

  5. Boil cubes for 10 - 15 mins in water

  6. Drain and rinse.

  7. Take chicken out of marinade and Grill until cooked (usually about 10mins).

  8. Pour the remaining marinade into a pan and add chopped mushrooms and cooked potato cubes.

  9. Heat gently whilst mixing everything together - ensure all cubes are covered with marinade.

  10. Serve chicken on bed of potato cubes.
