been making these my entire life, i'm french.
sometimes i add vanilla extract, it adds some taste but also some calories... :(

Ingredients

g flour |
| 250 |
ml skim milk |
| 1 |
egg |
| 1/2 |
pinch salt |
Directions
- mix flour and salt in a large bowl. push it to the sides of the bowl to make a hole in the middle.
- drop the eggs in the hole.
- mix with a fork starting in the middle while adding milk in small quantities. keep mixing while progressively incorporating all the flour. switch to a whisk when it's liquid enough.
- cover and leave to rest for about 30mn.
- to make the crepes, use a good non-stick pan. if it's not a good pan, you'll really need to very lightly butter the pan once or twice while you're making the crepes, otherwise they'll stick like crazy.
- preheat the pan.
- hold up the pan in one hand and using a ladle, pour some mix and twirl the pan around to spread it as thinly as possibe. for an 8' pan, about 1/4 cup. add little drops of mix to fill gaps if needed.
- you'll see the crepe change in appearance, when it's set but still a bit moist, use a spatula to flip it over and let it cook for about 20 extra seconds. then move it on to a plate and start the next one!
- once you get the hang of it, it's really easy. if the first of the batch doesn't cook right, it means your pan wasn't hot enough to start with. the next one should be fine.
- add a topping to your liking.
