Spicy Indian stew with ground beef. 4 servings per recipe
| 1 | pound lean ground beef |
| 3 | tbsp vegetable oil |
| 4 | tsp coriander |
| 2 | tsp cumin |
| 1 | tsp turmeric |
| 1/2 | tsp paprika |
| 1 1/2 | cups onion, finely chopped |
| 2 | tbsp garlic, minced |
| 2 | tbsp ginger, grated |
| 3 | cups tomato, chopped |
| 2 | cups water |
Heat a heavy saucepan over medium-high heat. Add the beef and cook, sitrring, until no longer pink and begins to brown. Transfer to a colander, drain, and return to the pan. Add the oil, coriander, cumin, turmeric, red pepper, onion, garlic, and ginger. Cook, stirring, until the onion looks soft and glazed, about 10 minutes. Add the tomatoes, water, and salt to taste and bring to a boil. Decrease the heat and simmer, uncovered, until all the moisture evaporates, about 30 minutes. Check periodically and stir to prevent sticking and burning. Add one cup of tomato puree.Categories
