southwestern chicken salad

Makes 6 servings

warm salad on a pita or wrap

Ingredients
2 cups chicken, cooked and cubed
1 cup jicama, peeled and cubed
1/2 cup miracle whip, light
1/2 cup salsa, green
1 avocado, cubed and sprinkled with lemon
1 cup tomato, diced
Directions
  1. Spread cubed chicken and jicama in flat microwave dish. Mix salsa and mayo in separate bowl, then add to chicken. Mix well. Microwave for 3-4 minutes, stirring once or twice, until hot.

  2. Fill pita with chicken, add avocaco and tomato.
