Fried eggplant slices with red pepper and fresh garlic
| 2 | eggplants, sliced, salted and rinsed |
| 2 | red peppers, seeded and sliced |
| 1/2 | c. fresh garlic, sliced |
| 1/2 | c. Olive Oil |
Sweat the eggplant and rinse thoroughly. Dry the slices and fry in olive oil, adding sliced pepper and garlic by turns. Drain on paper and store tightly in the fridge for up to a week (but it won't last!)Categories
