Fat Free Double Apple Muffins Recipe

Makes 12 servings


* sub in whole wheat pastry flour

Ingredients
1 egg
1/2 cup skim milk
1/2 cup unsweetened applesauce
2 medium apples, chopped(plus slices for the tops)
1 1/2 cups flour
1/2 cup brown sugar
2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
Directions
  1. Heat oven to 400 degree F.

  2. Beat the egg, milk and applesauce in a bowl.

  3. Add the chopped apples.

  4. In another bowl mix the dry ingredients.

  5. Dump dry ingredients in with the wet.

  6. Stir until just moistened.

  7. Spoon into muffin tin, put apple slice on top of each.

  8. Bake for 20 to 25 minutes.
