* sub in whole wheat pastry flour
| 1 | egg |
| 1/2 | cup skim milk |
| 1/2 | cup unsweetened applesauce |
| 2 | medium apples, chopped(plus slices for the tops) |
| 1 1/2 | cups flour |
| 1/2 | cup brown sugar |
| 2 | tsp baking powder |
| 1/2 | tsp salt |
| 1/2 | tsp cinnamon |
- Heat oven to 400 degree F.
- Beat the egg, milk and applesauce in a bowl.
- Add the chopped apples.
- In another bowl mix the dry ingredients.
- Dump dry ingredients in with the wet.
- Stir until just moistened.
- Spoon into muffin tin, put apple slice on top of each.
- Bake for 20 to 25 minutes.
