Stir Fry Chicken Salad

Makes 3 servings

a light and refreshing salad

Ingredients
2 teaspoons olive oil
2 cup boneless skinless chicken breast
1 green pepper
1 red pepper
1 small onion
2 tablespoons soy sauce
1 tablespoon dijon mustard
12 baby carrots
3 cups of lettuce
Directions
  1. Marinade chicken in soy sauce and dijon mustard for an hour.

  2. Put olive oil in a fry pan and add chicken, stir fry until chicken is almost done.

  3. Add the remining ingredients

  4. cook until veg are tender

  5. salt and pepper to taste

  6. Put over lettuce
