Grilled Veggie Salad Recipe

Great for summer!

Ingredients
1/4 medium eggplant
1/4 medium zucchini
1/2 yellow squash
1 medium tomatoe
1 cup romaine lettuce
1 tbsp butter
1 tbsp garlic
Directions
  1. slice eggplant, zucchini & squash as desired

  2. brush them with melted butter and garlic mixture

  3. grill them using frying pan, foreman grill or bbq

  4. slice lettuce as desired

  5. slice tomatoe as desired

  6. mix lettuce & tomatoe

  7. mix veggies into lettuce & tomatoe mixture

  8. enjoy!
