Amy's Italian Wedding Soup
| 1 | lb ground beef |
| 8 | cups chicken broth |
| 3 | cloves garlic |
| 1 | medium onion, diced |
| 4 | cups kale, chopped |
| 1 | cup spinach, chopped |
| 1 | tbsp olive oil |
| 1 | cup zucchini |
| 1 | salt |
| 1 | pepper |
- Make meatballs out of the ground beef OR use a bag of frozen meatballs - about 24 small meatballs will be great.
- Sautee onion in some olive oil for a few
- minutes.
- Add the zucchini
- Add the chicken broth
- Cook for about 30 minutes
- Add the garlic and a ton of chopped greens - like kale, mustard greens, spinach, whatever.
- If desired, add whatever herbs you have available, preferrably fresh - parsley, basil, rosemary, dill.
- Let the soup simmer until the greens are tender - maybe 10 more minutes.
- Add salt and pepper to taste.
