Blueberry Muffins Recipe

Other fruit can be substituted for the blueberries - rasberries work well

Ingredients
1 Egg
1/4 c Oil
1/2 c Skim Milk
1 1/2 c Flour
2 T Baking Powder
1/2 t Salt
1/2 c Sugar
1 c Blueberries
Directions
  1. Mix Egg, Oil, and Milk

  2. Add dry ingredients and mix until moistend (do not over mix)

  3. Mix in blueberries

  4. Place batter in muffin pan and bake at 400 for 20 minutes
