Other fruit can be substituted for the blueberries - rasberries work well

| 1/4 | c Oil |
| 1/2 | c Skim Milk |
| 1 1/2 | c Flour |
| 2 | T Baking Powder |
| 1/2 | t Salt |
| 1/2 | c Sugar |
| 1 | c Blueberries |
- Mix Egg, Oil, and Milk
- Add dry ingredients and mix until moistend (do not over mix)
- Mix in blueberries
- Place batter in muffin pan and bake at 400 for 20 minutes
