Crustless quiche style dish that combines the kids' fave ingredients. This recipe could easily be lightened up using egg whites or liquid egg substitute.
| 3 | slices Butterball Turkey Bacon |
| 1 | tsp. olive oil |
| 1 | onion, finely chopped |
| 350 | g sweet potatoes, cooked and chopped |
| 1/2 | cup frozen corn |
| 5 | eggs, beaten |
| 1 | dash ground black pepper |
| 1 | tbsp. cheddar cheese, shredded |
- Microwave bacon according to directions on package.
- In a large skillet heat oil, and saute onion until nearly opaque (2-3 min). Add sweet potatoes and cook (turning frequently to prevent sticking) for about 10 minutes on medium heat, until they start to brown. Add bacon and corn.
- Transfer mixture to pie plate lightly sprayed with non-stick cooking spray. Sprinkle cheese and black pepper evenly over the pan. Pour eggs over sweet potato/cheese mixture.
- Bake in 350F oven for 10 minutes and brown under a low broiler for another 5-6 minutes or until top is lightly browned.
