Makes two small loaves or 1 large.

Ingredients
| 2 1/4 |
cup flour |
| 1 1/2 |
teaspoons baking powder |
| 1/2 |
teaspoon baking soda |
| 1/2 |
teaspoon salt |
| 1 |
teaspoon vanilla |
| 3/4 |
cup brown sugar, packed |
| 3/4 |
cup applesauce |
| 2 |
eggs |
| 1 |
cup milk |
Directions
- Preheat oven to 350.
- Sift dry ingredients together.
- Crean sugar and applesauce.
- Add vanilla.
- Seperate eggs. Whip egg whites untill stiff. Beat egg yolks and add to sugar mixture.
- Add dry mixture to wet mixture a third at a time alternating with milk.
- Fold in egg whites and turn into well greased pan(s).
- Bake 30 - 40 minutes.
