Cheesy Polenta (1/8th, Baked Corn Grits with Cheese) Recipe

Makes 8 servings


1/8th = 1 serv = 301 cals (17.2 g fat, 10.8 sat fat, 850 mg salt, 23 g carbs, 0.7g fiber, 12.8 g protein) easy

Ingredients
1 1/2 c Polenta , uncooked corn grits (ground, degerminated)
5 c water, boiling
2 tsp salt
2 tbs butter , sweet without salt
12 oz cheddar cheese, grated
Directions
  1. preheat oven to 325 degrees

  2. put salt, butter and Polenta in 2 qt baking dish (like pyrex), pour boiling water in and mix well. Also, add spices to taste like onion powder, garlic powder, replace 1/4 c water with 1/4 c salsa if you want, add finely chopped mild green chilies or a pinch or 2 of crushed red chili peppers or some blackening seasoning...

  3. put in oven and forget for 1/2 hour

  4. at 1/2 hour, remove and stir well, scraping down sides. add grated cheese.

  5. put back in oven and bake for 15 - 30 more minutes (the longer, the firmer)
