cup yellow onion, minced roughly |

cup quinoa (dry) |

tsp garlic, minced |

tbsp lemon juice, fresh |
| 1/3 |
cup almonds, slivered |
| 2/3 |
cup dried cranberries |
| 2 1/2 |
cup spinach, slivered |
Directions
- Combine yogurt, garlic, lemon juice and refridgerate for 1/2 hour. Chop veggies, cook quinoa. Mix everything and chill until cold.
