spinach quinoa almond cranberry salad

Makes 8 servings

Ingredients
1/4 cup nonfat plain yogurt
2/3 cup yellow onion, minced roughly
1 small cucumber
2/3 cup quinoa (dry)
1 tsp garlic, minced
2 tbsp lemon juice, fresh
1/3 cup almonds, slivered
2/3 cup dried cranberries
2 1/2 cup spinach, slivered
Directions
  1. Combine yogurt, garlic, lemon juice and refridgerate for 1/2 hour. Chop veggies, cook quinoa. Mix everything and chill until cold.
