Asparagus and Beef Dijon Recipe

From New Dieter's Cookbook

Ingredients
2 tsp black pepper, whole
1 lb beef flank steak, trimmed of fat
1 lb asparagus, fresh or 10 ounces frozen spears
1 cup mushrooms, fresh and sliced
1/4 cup green onions, thinly sliced
1/4 cup water
1/2 tsp beef bouillon granules, instant
1/3 cup sour cream, light
1 tbsp flour, all purpose
2 tsp mustard, Dijon-style
Directions
  1. Coarsely crack the black pepper and rub into steak. Broil steak 3 inches from heat for 6 minutes. Turn steak over and broil 6 minutes more or to desired doneness.

  2. MEANWHILE, snap off and discard woody bases from fresh asparagus. In a covered saucepan cook asparagus in a small amount of boiling water for 4 to 6 minutes or until crip-tender. (Or cook frozen asparagus according to package directions). Drain. Keep warm.

  3. For sauce, in a medium saucepan combine mushrooms, green onions, water and bouillon granules. Cook, covered, over medium heat about 5 minutes. Stir together sour cream, flour an dmustard. Stir sour cream mixture into mushroom mixture. Cook and stir until thinkened and bubbly. Cook and stir for 1 minute more.

  4. To serve, thinly slice meat diagonally across the grain. Arrange meat slices and asparagus on dinner plates. Serve with sauce over dish or on the side.
