| 2 | tsp black pepper, whole |
| 1 | lb beef flank steak, trimmed of fat |
| 1 | lb asparagus, fresh or 10 ounces frozen spears |
| 1 | cup mushrooms, fresh and sliced |
| 1/4 | cup green onions, thinly sliced |
| 1/4 | cup water |
| 1/2 | tsp beef bouillon granules, instant |
| 1/3 | cup sour cream, light |
| 1 | tbsp flour, all purpose |
| 2 | tsp mustard, Dijon-style |
- Coarsely crack the black pepper and rub into steak. Broil steak 3 inches from heat for 6 minutes. Turn steak over and broil 6 minutes more or to desired doneness.
- MEANWHILE, snap off and discard woody bases from fresh asparagus. In a covered saucepan cook asparagus in a small amount of boiling water for 4 to 6 minutes or until crip-tender. (Or cook frozen asparagus according to package directions). Drain. Keep warm.
- For sauce, in a medium saucepan combine mushrooms, green onions, water and bouillon granules. Cook, covered, over medium heat about 5 minutes. Stir together sour cream, flour an dmustard. Stir sour cream mixture into mushroom mixture. Cook and stir until thinkened and bubbly. Cook and stir for 1 minute more.
- To serve, thinly slice meat diagonally across the grain. Arrange meat slices and asparagus on dinner plates. Serve with sauce over dish or on the side.
