Easy Veggie Wrap Recipe

Vegan if you substitute soy cheese for the mozzerella!

Ingredients
1 CarbWatchers Tortilla Wraps, Whole Wheat
21 g cucumber (about 3 slices, with peel)
1 oz alfalfa sprouts (a small handful)
15 g tomato (about three thin slices)
1/2 oz mozzerella (about two thin slices)
3 tbsp vidalia onion (diced)
3 tbsp mushrooms (chopped)
Directions
  1. Prepare the wrap's internals. Dice onion and mushrooms. Slice tomato. Slice cheese.

  2. Saute mushrooms and onions with a dash of oil (less than a teaspoon is all you'll need) for about a minute until mushrooms are shiny and less spongy, and onions are soft.

  3. Place two thin slices of cheese on the outside of the wrap; microwave for about half a minute or until cheese is your preferred degree of melty.

  4. Spoon mushrooms and onions into the center of the wrap.

  5. Put cucumber, tomato and sprouts on top of the mushrooms and onions.

  6. Wrap, and chow!
