| 1 | cup egg substitute |
| 1/4 | cup sweet red pepper, diced |
| 1/4 | cup green onions, sliced |
| 1/4 | cup (1 ounce) low-fat cheese, grated |
| 10 | ounces frozen spinach, drained |
- Mix eggs, peppers, onion, and spinach, well drained, in bowl. Add cheese, a dash of pepper sauce, salt and pepper to taste. Bake for 20 minutes at 350 degrees, or until firm (25-30 minutes)
- Can use any combination of appropriate vegetables.
- Freezes well.
