Pasta with Olive Oil, Garlic, and Pepper

Makes 6 servings

Add bread crumbs if desired, this is a wonderful, hearty Roman dish. The officially recipe calls for fresh parsley rather than oregano, but I tend to favor oregano.

Ingredients
1 lb penne
2 tbsp olive oil
1 tsp red pepper flakes
4 cloves garlic
1 tsp dried oregano
1/2 oz
Directions
  1. Boil plenty of salted water and cook pasta.

  2. While water is boiling and pasta is cooking, dice garlic.

  3. Heat olive oil in a skillet and gently simmer garlic, red pepper, and oregano over medium heat until garlic changes color. At that point, remove from heat.

  4. When pasta is done, drain as normal, and then toss with garlic-olive oil blend.

  5. Top with your favorite cheese and serve.
