Delicious recipe, originally from the Syracuse Post-Standard. I've modified the dressing to a healthier version, but every bit as tasty as the original! If you don't want to shred the cabbage/carrots, use prebagged coleslaw mix and a handful of matchstix carrots instead.

Ingredients
Salad: |

oz. mandarin oranges, 1 can |
| 1/2 |
c. dried pineapple, cube to 1/4" |
| 1/2 |
c. dried cranberries |
| 2 |
c. shredded cabbage |
| 1 |
c. shredded carrots |
| 1/2 |
c. chopped walnuts, toasted |
Dressing: |
| 1 |
tbsp. olive oil |
| 2 |
tbsp. white balsamic vinegar, Colavita brand |
| 2 |
tsp. soy sauce, low-sodium |
| 1/2 |
tsp. garlic powder |
| 1/2 |
tsp. ground ginger |

Directions
- Drain mandarin oranges. Cut oranges in half. In a large serving bowl, combine oranges with dried fruits and carrots. Stir gently to moisten all, top with cabbage and walnuts.
- In a jar or other tightly lidded container, combine all dressing ingredients. Cover; shake well (over a sink!) to combine. Taste and correct seasonings.
- Pour the dressing over the salad, do not stir. Cover salad, refrigerate for 2-8 hours. Toss gently before serving and top with toasted coconut (or pass at table for individual servings).
