I had these at On The Border, the mushroom has a very meat-like texture. They served with tortillas instead of rice, and beans and rice, etc... I made up my own recipe for a lot less money, calories, and fat. If you like, you can serve with cheese, sour cream, and guacamole.
| 2 | c portabella mushroom (about 2 caps), cut into 1/2 inch strips |
| 2 | c bell peppers, cut into strips |
| 2 | c rice, prepared (about 1/2C raw) |
| 2 | t McCormick fajita seasoning (one package) |
| 1/2 | c water |
- mix seasoning into water
- marinate peppers and mushrooms in mixture until you are ready to start cooking
- grill on BBQ or in pan
- serve over rice
