Tjcm's Portabella Fajita Bowls Recipe

I had these at On The Border, the mushroom has a very meat-like texture. They served with tortillas instead of rice, and beans and rice, etc... I made up my own recipe for a lot less money, calories, and fat. If you like, you can serve with cheese, sour cream, and guacamole.

Ingredients
2 c portabella mushroom (about 2 caps), cut into 1/2 inch strips
2 c bell peppers, cut into strips
2 c rice, prepared (about 1/2C raw)
2 t McCormick fajita seasoning (one package)
1/2 c water
Directions
  1. mix seasoning into water

  2. marinate peppers and mushrooms in mixture until you are ready to start cooking

  3. grill on BBQ or in pan

  4. serve over rice
