Lemon Cupcakes Recipe

basic cupcakes

Ingredients
125 g caster sugar
155 g plain flour
2 tsp baking powder
2 eggs
125 g butter
5 oz icing sugar
4 tbsp lemon juice
Directions
  1. whizz up caster sugar, butter, eggs.

  2. Sift flour and baking powder into mix.

  3. spoon into small cupcake cases.

  4. Rest at room temp for 30 minutes.

  5. Bake at 200C for 15-20 minutes till golden.

  6. Mix up juice and icing sugar then dribble it over cooled cakes.
