| 155 | g plain flour |
| 2 | tsp baking powder |
| 2 | eggs |
| 125 | g butter |
| 5 | oz icing sugar |
| 4 | tbsp lemon juice |
- whizz up caster sugar, butter, eggs.
- Sift flour and baking powder into mix.
- spoon into small cupcake cases.
- Rest at room temp for 30 minutes.
- Bake at 200C for 15-20 minutes till golden.
- Mix up juice and icing sugar then dribble it over cooled cakes.
