Robbie's Thin Pizza Crust Recipe

Robbie's recipe modified slightly to use whole grain flour. This is a quick no-rise recipe. Serving size is 1/4 recipe. I use this recipe to make two pizzas (it is a lot of calories once you put cheese and, in my case, pepperoni on top so I do save this for big exercise days). King Arthur flour recommended. Also recommended is a pizza stone and a peel, cornmeal, and rolling pin. If you don't have a stone you can use a pizza pan, but you will have to oil the pan (EVOO) and it will cost you calories. Ingredients
1 package active dry yeast
1/4 tsp granulated sugar
3/4 cup water, 110 degrees Fahrenheit
1 cup bread flour (unbleached)
3/4 cup whole wheat flour (King Arthur whole grain white flour, unbleached)
1/2 tsp salt
Directions
  1. Preheat oven to 500 degrees Fahrenheit. If you are using a stone you know it needs to be preheated as well.

  2. Dissolve yeast and sugar in water; allow to rest for 8 minutes.

  3. In a separate bowl, combine flour and salt.

  4. Pour yeast mixture over flour mixture and mix well with a heavy spoon.

  5. Turn dough onto a floured surface and knead for 2 minutes.

  6. Divide dough into two parts.

  7. For each part, place dough on peel sprinkled with cornmeal or oiled pizza pan. If you are good with dough go ahead and work the dough into a circle the size of your choice. You can make a smaller thicker pizza if you like, or a bigger thinner one, it's up to you. Or if you're terrible with dough like me, use a rolling pin to make the dough the shape and size you want.

  8. Spread sauce over crust and top with cheese and desired toppings.

  9. Bake in a 500 degree oven for 8-12 minutes, or until edges are golden.

  10. You can freeze the dough, by the way. :)
