South with Curry Soup (Chicken) Recipe

Ingredients
1 tbs olive oil
1 large onion, chopped
1 large red bell pepper, chopped
4 cloves garlic, chopped
5 tsp curry powder
2 tsp fresh ginger, grated
1 lb chicken, boneless breast cut into 1" pieces
1/4 tsp crushed red pepper flakes (careful...got stuff)
1 salt and pepper to taste
7 cups chicken broth
3 cups canned tomatoes, diced and peeled
2 apples, medium granny smith, peeled and chopped
4 oz pasta (orzo, 1/2 cup)
2 oz currants
6 tsp fresh cilantro, chopped
6 tsp plain yogurt
Directions
  1. Heat oil in large pot over medium heat. Add onion, red pepper, garlic and chicken. Saute until just cooked thru, about 7 mins. Add curry, ginger and crushed red pepper and stir well. Add broth, tomatoes, apples and bring to boil.

  2. Reduce heat to simmer 30 mins. Stir in orzo and currants. Simmer 10 mins. Check again for salt and pepper.l

  3. Garnish with cilantro and yogurt if desired.

  4. note: I usually make this with leftover cooked chicken, adding it with the broth, tomatoes and apples.
