Main Dish Soup
| 4 | cups white cabbage, chopped |
| 2 | cups carrots, sliced |
| 4 | stalks celery, sliced |
| 1 | medium onion, diced |
| 1 | tbsp olive oil |
| 1 | tbsp cider vinegar |
| 1/4 | cup parsley, chopped |
| 1 | large potatoe, diced |
| 4 | cups chicken broth |
| 1/2 | cups white beans, cooked |
| 2 | cups tomatoes |
- Prepare Vegetables
- Saute onion in oil until translucent; add carrots and celery and continue to saute for 5 minutes. Add crushed tomatoes and broth. Bring to a boil and add cabbage, potatoe and beans; simmer for 20 minutes take off of heat. Add parsley and vinegar and adjust seasoning with salt and pepper.
