Cabbage & White Bean Stew Recipe

Main Dish Soup

Ingredients
4 cups white cabbage, chopped
2 cups carrots, sliced
4 stalks celery, sliced
1 medium onion, diced
1 tbsp olive oil
1 tbsp cider vinegar
1/4 cup parsley, chopped
1 large potatoe, diced
4 cups chicken broth
1/2 cups white beans, cooked
2 cups tomatoes
Directions
  1. Prepare Vegetables

  2. Saute onion in oil until translucent; add carrots and celery and continue to saute for 5 minutes. Add crushed tomatoes and broth. Bring to a boil and add cabbage, potatoe and beans; simmer for 20 minutes take off of heat. Add parsley and vinegar and adjust seasoning with salt and pepper.
